Hey Pav,
Here's one example of how a fifth grade teacher at our school used a wiki this year. She created the structure and loaded it with many of the resources and then the kids used it for a group research project. They took notes, and wrote rough and final drafts in the wiki. This allowed the teacher and fellow group members to follow and comment on their progress every step of the way.
